Healthy Red Chile Chicken Tacos Recipe

After spending a few hours in the cold watching my youngest daughter win her first tennis match, I realized I hadn't planned supper for the week. Upon arriving home, I searched the cupboard for inspiration and noticed the dried chilis I usually keep on hand. It then occurred to me to make chicken chili. By adding your own dried chilis to chicken tacos, you can take them to a whole new level. Preparing an authentic Mexican meal at home is easy and only takes a few simple steps that can be done in under an hour. I hope everyone had fun!

Here is a recipe for delicious tacos with red chili chicken and queso drizzle.

Ingredients:

2 roast chicken breasts, shredded

6 Guajillo peppers, washed and seeded, chopped coarsely

1 onion, chopped coarsely

3 cloves of garlic, minced

1/2 teaspoon of salt

1/4 teaspoon of pepper

2 cups of chicken stock

1/4 teaspoon of dried oregano

2 tablespoons of vegetable oil

- Butter

Flour tortillas

White cheese for drizzling

Shredded red cabbage

Cilantro, chopped

To start cooking, heat up a saucepan and add a mixture of chopped chilies, onions,garlic, salt, and pepper. Pour in the chicken stock and let it simmer for 25 to 30 minutes, stirring occasionally. After that, turn off the heat and let the mixture cool for 5 to 10 minutes. When it's cooled down, transfer the mixture to a blender and add oregano while blending. Please be cautious, as it may still be hot!

Afterwards, pour the vegetable oil into the pan and heat it on medium heat. Bringback the sauce, let it simmer for 10–15 minutes, and then take it off the heat to cooldown. Add the shredded chicken to the sauce and toss to coat it uniformly.

Melt the butter in a pan over medium heat. Cook each tortilla in the pan until it becomes crispy and golden. As you cook each tortilla, cover it with foil to maintain warmth.

To make the tacos, put the chicken mixture in each tortilla and add a good amount of queso (you can purchase it from the store if needed!), along with shredded red cabbage and chopped cilantro. Enjoy your delicious tacos!
